All time fave: Beef tartare

Whenever I think about this dish, I picture a fancy restaurant that is way out of my budget. I remember telling my boyfriend it would be neat if we could make this dish on our own and that's exactly what happened.
I was back home visiting my parents when my boyfriend tried this recipe out. It was a dish he fell in love with immediately and could not get enough of. This recipe was on repeat all of January and here's how we made it.
We started with meat trimmed down to the good parts; we used an eye of round cut of meat. After cutting the meat, finely mince the meat. You can use a meat grinder, food processor, or hand chop the meat; we ended up hand chopping the meat. Next, add minced cornichons, garlic, parsley, a squirt of yellow mustard, and two egg yolks. Add in salt and pepper to taste and mix everything. Leave in the fridge for about an hour before eating. Serve the beef tartare with sourdough toast or potato chips.
This is one of my favorite dishes and I hope you guys enjoy it as much as we did.
