Wow.. it's been too long.


The start of 2024 was a bit hectic. We had a leak in our kitchen that led to 80% of the apartment being torn up and put back together. While our kitchen was out of service, I learned how to cook over a charcoal grill, something I was never confident in. To my surprise, after a month of using the grill, I learned how to start a fire, tend it, and cook burger patties.


I am thrilled that my kitchen is back together and functioning. After a weekend of deep cleaning and a week of unpacking, I made my first meal on the stove - fried rice. I was craving some homecooked meals and garlic fried rice is my go-to dish.


Start by mincing up garlic. Heat some animal fat or olive oil in a pan. Fry the garlic in the oil for a few minutes until golden and fragrant. Toss in the day-old rice and mix with the fried garlic. I like to add in a bit of butter while frying the rice. Make a small hole in the middle of the pan and crack an egg in. Mix the rice with the egg. Once the egg is cooked, transfer the rice into a bowl. Top off the dish with chopped scallions and serve with sriracha sauce. You can always add a sunny side egg on top. Enjoy!
